指家禽或豬肉表皮經燒、焗或炸等高温烹調法後，變得金黃酥脆；響燒豬上尤指一種特殊技巧，響燒嘅時候搽上白酒，令豬皮出現酥化形成麻狀，可以保持酥脆更長時間 (the skin of pork, poultry becomes crispy after barbecue, roast or deep fried; especially means the special technique to apply spirits on the skin during roasting, the skin become puffy thus letting the crispness last longer)
